Hoffman: At State Fair, it's all about the deep fry
The Houston Livestock Show and Rodeo has the Texas State Fair beat in every department except, and this is a tough one for me to admit, ridiculous fried food.
Fried Butter, fried Coca-Cola, fried Oreo cookies, fried banana splits, and many more grease-dripping brainstorms got their start under the shadow of Big Tex up in Dallas. The frenzy hit its peak in 2009 when Oprah Winfrey visited the State Fair to see - and obviously eat - this bizarre fried food for herself.
This year's Texas State Fair begins Sept. 30 and runs through Oct. 23. To kick start interest and ticket sales, the Big Tex Choice Awards contest was held on Labor Day, with eight new fried delicacies competing for two prizes: Most Creative and Best Tasting.
Fried Bubblegum won for Most Creative. It's not what it sounds like. Fried Bubblegum starts with a marshmallow that is flavored with bubblegum extract (there is such a thing?) dipped in pink batter and deep-fried. Then it's covered with blue icing swirls and topped with mini-Chiclets gum. It sounds disgusting, which means it will be a huge seller.
Buffalo Chicken in a Flapjack won for Best Tasting, and it's exactly what it sounds like. From inside-out, take a Buffalo chicken strip, dunk it in pancake batter, roll it in jalapeño bread crumbs, plop it in the deep-fryer and stick it on a stick. This actually sounds pretty tasty.
Other entrants in the 2011 Big Tex Choice Awards contest were: deep fried pineapple upside-down cake, deep fried Texas salsa, fried autumn pie, Hans' kraut ball and a walking taco.
Galveston resident Lydia Turner 's El Bananarito didn't win a prize, but you're hardly a loser when you make so much money selling funnel cakes at the Texas State Fair for three weeks that you don't have to work the rest of the year.
What does she do the other 49 weeks?
"I spend what I make at the fair. Selling food at the Texas State Fair is very lucrative. Three million people attended the fair last year," Turner said.

The funny thing about the fair is that while you’re eating all of that fantastically fried food, you might accidentally learn something. And I don’t mean how much the record-breaking hog weighs (though I recommend checking that out, too).
For example, North Dakota State University is sending a group of 14 students to the Minnesota State Fair this year to show off a “North Woods” cabin they built that is so efficient, it requires the energy equivalent of nine light bulbs to heat it.
The passive house cabin will be featured in the Eco-Experience exhibit to educate fairgoers about state-of-the-art concepts in energy efficiency in the built environment. The cabin makes use of many “free” passive heat sources such as heat generated by its occupants, waste heat from appliances, passive heat from the earth and heat from the sun.
The design of the low-energy 4-person demonstration cabin also takes into consideration carbon implications and resource use analysis as a step towards achieving a sustainable future.
Students worked on the cabin’s design during the spring semester and summer, and brought the cabin to life just weeks before the fair. They were responsible for nearly every aspect of the job – including project manager, architect, fundraiser, accountant, interior designer, drafter, contractor, builder, web designer and graphics designer.
Ultimately, the goal of these students is the same as ours: to get you to think about ways to be efficient.
